How to remove a mapping?

The AnymaPhi is my first physical modeling synth and I am very excited about the vitality of the sound. I fully share the enthusiasm about this machine, congratulations!
I followed the example in the manual and easily managed to add a new mapping to the timbre of patch #1. Now I'm puzzeling about how to remove a specific mapping from a patch (other than just neutralizing its impact by setting the amount to 0).
Another question is related to the oscillator parameters. One can set the 'quality' of the sound ranging from 'lowest' to 'highest'. I haven't testet yet how this affects a patch but don't we always like to have maximum sound quality?

Set the ‘from’ of the mapping to ‘none’.
